A Few Southern Favorites

Earlene, Aunt Addy’s cook is always whipping up masterpieces for Quincy. Here are a few:

My family’s favorite dessert:
LEMON ICEBOX PIE

1 can condensed milk
1 ½ lemons (the rind of one)
3 eggs
6 tablespoons sugar
Graham cracker crust

 

GRANDMAMA’S BLACKBERRY COBBLER
During the summers when I was growing up, boys would knock on my grandmother’s door to sell wild blackberries they’d picked. She’d buy some, walk straight to the kitchen, and whip up the best blackberry cobbler you can ever imagine. Although, I suspect to make it the “best” you’d have to add a little “essence of grandmother” which, sadly, is no longer available. She didn’t use a recipe, of course; just a little of this and a little of that. The recipe below is the closest I can find to what my grandmother made.

Four cups berries
2/3 to ¾ cups granulated sugar
3 tablespoons flour
1/8 teaspoon flour
¼ teaspoon nutmeg
¼ teaspoon cinnamon
1 teaspoon lemon juice
2 teaspoons melted butter

 

 

GOOD SOUTHERN DIVINITY
My mother, a teacher, used to make divinity for her classes at school on special occasions. My brother and I were allowed ONE piece which I thought was highly unfair. Only when I was older did I understand my mother’s prohibitions against consuming too much sugar. Earlene, in “The Lady,” makes divinity for Quincy and doesn’t restrict her to one piece!

2 1/3 cups granulated sugar
2/3 cup white corn syrup
½ cup water
¼ teaspoon salt
2 egg whites
½ teaspoon or almond extract
OPTIONAL: ½ cup chopped Brazil nuts or walnuts (or shredded coconut)
